Apple Stuffed Chicken

We thought it would be tasty to stuff chicken breasts with apples and bake them.  After much debate about how to season the chicken and what to use for the filling, we came up with this recipe...



What you will need...
  • 3 chicken breasts
  • 1 apple, diced
  • 1 small onion, diced
  • 1/2 tbsp butter
  • salt and pepper
  • BBQ sauce (make your own or use your favorite already made sauce)
Heat a skillet over medium heat.  Add the butter and onions.  Cook for a bit and add salt and pepper.  When the onions are almost brown, add the apples and toss.  Remove from heat.  Since the breasts will be pretty thick, butterfly each one and then cut the two halves apart.  Place the chicken between two pieces of plastic wrap and pound them out to be thin.  Season the chicken with salt and pepper, and brush BBQ sauce on each.  Place a spoonful of the apple mixture towards one end of the chicken and roll the chicken up.  Use toothpicks to hold the chicken together.  Place each in a baking dish, brush with a bit more BBQ sauce, and season with salt and pepper.  Cover the dish with foil and bake on 350* for about 40 minutes...YUM-OLA!






Sides to think about...best with a sweet potato and green vegetable.

How many people can eat...if you serve a a few sides, you can feed about 6 people.
