BBQ Pineapple Chicken Roll

Since the Apple Stuffed Chicken was so good, we decided to try the same idea with one of our favorite combinations...pineapples, chicken, and BBQ sauce...











What you will need...
  • 3 chicken breasts
  • BBQ sauce (store bought or homemade)
  • 1 can of diced pineapple, drained and diced a bit smaller
  • salt and pepper
Preheat the oven to 350*.  Since the chicken breasts are a little bit thick, butterfly them and then cut the two halves apart.  Season with salt and pepper, and brush with BBQ sauce.  Place a spoonful of the pineapple towards one end of the chicken, cover with more sauce, and then roll the chicken up.  Use a couple toothpicks to hold it together, place in a baking dish, season with salt and pepper, and brush with more BBQ sauce.  Cover and bake for about 40 minutes...YUM-OLA!!!

Sides to think about...sweet potato wedges would go great with this chicken!

How many people can eat...serve several sides and you can feed about 6 people.
