We had some sweet peppers on hand and decided to dress up some chicken in the middle of the week, so we pulled out some spring flavors and the crock pot...
What you will need...
- 4 chicken breasts or combo of breasts and legs (bone-in and skins on)
- 1 tbsp olive oil
- salt and pepper
- 2 tbsps lemon pepper seasoning
- 1 orange pepper, sliced
- 1 yellow pepper, sliced
- 1 sweet onion, sliced
- 1 clove garlic, cracked and left whole
- 1 can white beans, drained and rinsed
- 1 cup uncooked brown/wild rice mix
The night before, prepare the crock pot. Pat the chicken dry and coat with olive oil. Season with salt and pepper, and 1 tbsp of the lemon pepper seasoning. Place in the crock pot with the peppers, onion, and garlic clove. Cover and refrigerate over night. In the am, add water to the bottom of the crock pot, season again with salt and pepper, and cook for 6 hours on low. Pull the chicken and strain the veggies. Cook the rice with 1/2 tbsp lemon pepper seasoning and some of the stock; and cook the beans with the other 1/2 tbsp lemon pepper seasoning and a bit of the stock. Mix all together and add more of the stock if needed...YUM-OLA!!!
