Roast, Potatoes, & Carrots

Who doesn't love easy one pot meals, especially when it is a roast in the Crockpot.  When I was little, momma would make roast, potatoes, and carrots and it still leaves my mouth watering...keeping the tradition going makes the house smell amazing...










What you will need...

So, depending on what you are wanting to get out of your roast, you can decide how much of each food you want.  We wanted to eat it two nights and use the rest for vegetable beef soup (can't wait for that night!)...so, you decide how much roast, potatoes, carrots, and onions you will need...
  • roast
  • Idaho potatoes, peeled and cut into two or three chunks each
  • carrots, peeled
  • onion, peeled and cut into large chunks
  • 1 can beef broth
  • 1 clove garlic, peeled and left whole
  • 1/2 packet of onion soup mix
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • salt and pepper
  • water
Place the roast, potatoes, carrots, onion, and garlic in the Crockpot.  Add the onion soup mix, rosemary, thyme, salt and pepper.  Add water if you are using a large Crockpot and the liquid from the broth is not enough.  Cook on low for 8 hours until the roast easily falls apart...YUM-OLA!!!
