Bare Burrito

Whole chickens were on sale at the grocery, so we decided to use the pulled chicken in different dishes.  This was our take on the naked burrito...



What you will need...
  • 1/2 of a whole chicken, cooked and pulled and seasoned with chili powder and cumin...as much as you want!
  • 5 cups of cooked brown rice (cooked in chicken stock)
  • 2 cans of black beans, drained and rinsed
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 onion, diced
  • 1/2 bag frozen corn, thawed
  • 1 cup salsa
  • hot sauce (optional)
  • salt and pepper
  • 1 cup of shredded cheese (we used a blend)
  • jalapenos, diced (optional)
For our bare burritos, we warmed rice and beans.  Then we divided the rice and beans onto each plate, followed by the salsa, peppers, onion, corn, salt and pepper, a splash of hot sauce, cheese, and a few jalapenos.   But, the best part about these is you can add anything you want!  A pile of warm rice and beans covered with crunchy veggies and topped with cheese...YUM-OLA!!!

How many people can eat...should make 4 really big plates.
