Wokin' Chicken

In planning the meals for the month, I realized we hadn't had chicken stir fry in a long time (by long time, I mean that our soy sauce had expired) so here it is...super easy...















What you will need...
  • 3 chicken breasts, cubed
  • 2 bags of frozen "stir-fry" vegetables and 1/2 bag frozen peas
  • 1 small can water chestnuts, drained
  • 1/4 cup soy sauce...we used a bit more than this because we love soy sauce!
  • 2 tbsps corn starch
  • 1 tbsp garlic powder
  • 1 tbsp black pepper
  • 1/8 cup water
  • 2 tbsps vegetable oil
Mix soy sauce, corn starch, garlic powder, pepper, and water in a bowl.  Add chicken to the bowl and allow to soak up the flavors.  In a wok, heat oil.  Pick the chicken out of the sauce and put in the wok...cook until no longer pink.  Remove the cooked chicken, add a bit of water to the wok and cook the vegetables and water chestnuts.  When vegetables are almost done, add chicken and poor sauce over mixture in the wok.  Cover with a lid and allow to cook for a few minutes.  Serve over rice...Yum-ola!

How many people can eat...should feed 4.
