Red Pepper Hummus

The first time I made hummus I tried a variation of a roasted red pepper hummus recipe.  It was so good, that after a few modifications it has become our go-to...
















What you will need...
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 2 roasted red peppers (1/2 a 12 ounce jar)
  • 3 tbsps lemon juice
  • 1 1/2 tbsps tahini
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 tbsp chopped parsley
Put all ingredients in a food processor and have at it!  You can make it whatever consistency you like by using long pulses until it starts to get smooth.  Scrape sides before the last pulse to make sure everything is mixed well.  Refrigerate at least 1 hour before serving.  Great with vegetables and homemade whole wheat chips...Yum-ola!!!

How many can eat...it makes about two cups of hummus.
