Spicy Sweet Potato Cakes

We eat sweet potatoes almost every night, so I was excited to run across this idea!  I have so many different ideas for tastes...can't wait to try them!




What you will need...
  • 3 medium sweet potatoes, peeled, diced, and boiled
  • 1 cup brown rice, cooked
  • 1 can black beans, drained and rinsed
  • 1/2 cup frozen corn, thawed
  • 1 small onion, diced
  • 1/2 red pepper, diced
  • 3 cloves garlic, diced
  • salt and pepper
  • 3 tsps cumin
  • 3 tsps chili powder
  • 1 tsp cayenne pepper
  • 1 tbsp olive oil

Heat skillet on medium heat.  Mash together the potatoes and beans.  Add the rice, corn, onion, pepper, garlic, salt and pepper, cumin, chili powder, cayenne pepper, and olive oil.  Mix well and form large cakes.  Put a bit of olive oil in the pan.  When the pan is hot, add the cakes.  Cook 5-10 minutes on each side, until golden brown...YUM-OLA!!!

Sides to think about...great over rice and with veggies on the side.

How many people can eat...makes about 8 cakes.
