Smothered Mashed Tatters

We had overloaded baked potatoes before, so why not try the idea with Jeff's yummy mashed potatoes?  Great comfort meal that is healthy...










What you will need...
  • whole chicken; seasoned with salt, pepper, and fresh rosemary, cooked on medium for about 8 hours in the crock pot and then pulled
  • broccoli florets (3 boxes of frozen), steamed
  • 6 medium potatoes (Idaho or Red), cut into chunks to be boiled
  • 1 1/2 tbsps butter
  • splash of milk
  • 3 cloves garlic, diced
  • 1/4 cup chicken stock from crock pot
  • salt and pepper
  • your favorite cheese to grate on top
Bring a pot of water to a boil and season water with salt.  Add chunks of potatoes and boil until soft.  In a pan, saute the garlic in the butter for a few minutes. Put potatoes in a bowl with butter and garlic, and mash.  Add milk until you get them to the consistency you want.  Season with salt and pepper.  Portion the potatoes out onto 6 to 8 plates.  Top potatoes with broccoli, rosemary pulled chicken straight from the crock pot, warm chicken stock, and grated cheese...YUM-OLA!

How many people can eat...should feed 6 to 8 people.
