Tiny Turkeyloafs

Did I mention that I love the size of anything that comes out of the muffin pan?  I have wanted to try out muffin meatloafs for awhile, so here is my healthy version with a BBQ twist.




What you will need...
  • 1 (8oz) can tomato sauce
  •  1 1/2 tbsps Worcestershire sauce
  • 1 1/2 tbsps vinegar (apple cider or white)
  • 1 clove garlic, grated
  • 1/4 of an onion, grated
  • 1 tbsp brown sugar
  • 1 tbsp maple syrup
  • salt and pepper
  • 2 lbs ground turkey
  • 2 eggs
  • 1 can pinto beans, rinsed and drained
  • 3/4 onion, diced
  • 1/3 cup oats, the quick cooking ones
  • olive oil
Preheat your oven to 425*.  In a small sauce pot, combine and simmer the tomato sauce, Worcestershire, vinegar, garlic, onion, brown sugar, salt and pepper.  In a bowl, mix the turkey, beans, rest of the onion, 2 eggs, 1/2 cup quick oats, salt and pepper.  Mash using a potato masher.  Add about 6 tbsps of the sauce and mix well.  Fill the muffin pan, top each loaf with a bit more sauce, and bake for about 20 minutes.  Add more sauce during baking if you want and definately spoon some on when serving..YUM-OLA!!!

Sides to think about...anything you would eat with BBQ!

How many people can eat...makes about 14 loafs.
