This was Jeff's birthday dinner! I bought some ground bison (okay that is not budget friendly, but this was a special meal) from Fresh Market and wanted to make BBQ burgers. I have never mashed sweet potatoes, but thought that would be a nice touch, so here it is...
What you will need...
- 1 lb ground bison
- salt and pepper
- BBQ sauce (hickory flavor)
- monterey jack cheese, thinly sliced
- 3 medium sweet potatoes, diced into 1 inch cubes, with skin
- 1 tbsp milk
- 1 tbsp butter
- 1 tsp cinnamon
- 1 tbsp maple syrup
Bring a pot of water to a boil and add the diced sweet potatoes. Boil until soft, about 15 minutes. Meanwhile, heat your grill and pat out the burgers. In a bowl, mix bison, a splash or water, and salt and pepper. Pat out into 4 equal burgers. Remember to make the indention in the middle of the burger with your thumb. Brush the burgers with a small amount of BBQ sauce. Grill the burgers over medium heat about 5 minutes on each side. Brush BBQ sauce on after the first flip, and then the cheese with a couple minutes left. In a bowl, add the butter, dash of salt, milk, cinnamon, maple syrup, and sweet potatoes. Use a potato masher to mash together until desired consistency....YUM-OLA!!!
Sides to think about...great with any veggie or salad!
How many people can eat...should feed 4.
