Lazy Day Lasagna

This is my spin on a family favorite...Grandma knows how to make the best lasagna.  I have noticed that there are two kinds of people in the lasagna world...those who like ricotta cheese and those who prefer cottage cheese...lucky for Jeff and I we are both cottage all the way!




  What you will need...
  • 1 package whole wheat lasagna noodles (you will have some left over if you cook all)
  • 2 -3 tbsps olive oil
  • 5 cloves garlic, minced
  • 1 small onion, diced
  • 1 lb ground italian sausage (or ground beef, or ground turkey)
  • 1 large can crushed tomatoes, 28 oz.
  • 1 can diced tomatoes, 14.5 oz.
  • 1 can tomato sauce, 15 oz.
  • 1 can tomato paste, 12 oz.
  • 2 tbsps itialian seasoning
  • 1 tbsp oregano seasoning
  • 1 tbsp basil seasoning
  • cottage cheese, 40 oz.
  • 1 package frozen chopped spinach, thawed and drained
  • mozzarella cheese, shredded, 16 oz.
  • parmesan cheese, to grate

Preheat oven to 375.  Get your water going for the noodles.  In a large pan, heat olive oil and add garlic.  Then add the ground italian sausage and 1 tbsp italian seasoning; when about half browned, add onions to pan.  When sausage is cooked, drain some of the grease, and add all tomato items.  Season the sauce and let cook on medium for about 10 minutes.  Layer in a lasagna pan (if you don't have one, get one, they are great!!!) the following:  noodles, 1/2 of the cottage cheese, 1/2 of the mozzarella cheese, 1/2 of the spinach, 1/2 of the sauce, noodles, rest of cottage cheese, rest of mozzarella cheese, rest of spinach, rest of sauce.  Grate some parmesan on the top, cover with foil and cook for 30 minutes.  Take the foil off and cook 15 minutes longer.  Let set for at least 15 minutes before serving...the longer you wait the more it sets...YUM-OLA!!!










Sides to think about...great with a spinach salad and garlic bread!

How many people can eat...this thing is huge!  We like to freeze some if it is just us eating it, but you can definitely give about 10 people happy bellies!
