Simple Beef Stroganoff

I loved this when I was a kid, and luckily momma handed over the recipe she used.  I modified it just a bit to add more veggies, but it is still as yummy as I remember...
 









What you will need...
  • 1.5 lbs of lean beef, cubed
  • 1/3 cup water
  • 1/4 cup sherry, red wine, or your favorite beer
  • 1 can low fat cream of mushroom soup
  • 1 tbsp of  dry onion soup mix
  • 1/2 cup mushrooms, sliced
  • 1/2 onion, sliced
  • a bit of pepper
This is so easy...just put it all together in the crock pot for about 5 hours.  Serve over brown rice or whole wheat noodles; or if you don't have any time just put it over a whole grain bread...YUM-OLA!!!

Sides to think about...green beans, broccoli, or asparagus are great choices.

How many people can eat...should feed 4.
