We haven't had tuna in forever, so I thought I would try some tuna cakes. Since we had some of mom's home-grown tomatoes, we decided to use garlic, dill, and lemon. And since we got home late, this was the perfect quick and healthy meal...
What you will need...
- 1 large Idaho potato, cut in cubes with skin still on
- 2 cloves of garlic, peeled and diced
- 1 tbsp butter
- splash of milk
- 2 cans (12 oz cans) of tuna in water, drained
- 1 small yellow onion, diced
- 1 egg
- 2 tsps dill
- 2 tsps lemon juice
- 1 lemon
- 2 tbsps olive oil
- salt and pepper
- 15 saltine crackers, crushed
First, you are going to make garlic mashed potatoes. In a pot, boil water and add cut potato and a pinch of salt. Boil until soft, about 10 minutes. Meanwhile, in a bowl, mix together tuna, onion, egg, dill, and lemon juice. In a small saute pan, saute the butter and garlic. Mash together the potatoes, splash of milk, and the garlic butter with a potato masher. In a large saute pan, add 1 tbsp oil and put on medium-high heat. Add half of the potatoes to the tuna mixture and blend together. Form 8 tuna cakes, place each side in cracker crumbs, season with salt and pepper, and then set four of them in the pan. Cook for 4 minutes on each side, or until golden. Cook the remaining 4 cakes. Squeeze a bit of lemon on each cake...YUM-OLA!!!
Sides to think about...you have already made one side...the rest of the potatoes! Simply put a super small bit of potatoes under the cake when you serve it. Then, try some snap peas and cooked carrots to finish the plate.
How many people can eat...should feed 8.
