Jeff and I love stuffed peppers, especially this time of year when peppers are so delicious. We saw a recipe in a magazine for CrockPot peppers and thought it was a great idea, so we put together our own version...
What you will need...
- 4 red peppers, tops cut off, stem and seeds removed
- 2 medium potatoes (red or Idaho) or you can probably use orzo or rice
- 2 cups of fresh spinach
- 2 garlic chicken sausages, diced or you can use any meat/poultry
- 2 samll onions, diced
- 1 cup mushrooms, diced
- 4 cloves garlic, minced
- 1/2 cup parmesian cheese, grated
- 2 tbsps olive oil
- salt and pepper
- 32 oz can of crushed tomatoes
- 1 cup of cherry tomatoes
- 1 tbsp Italinan Seasoning
How many people can eat...should feed 4.
Sides to think about...goes great with a summer salad and garlic bread.
