Caliente Chicken

We haven't had Mexican in a while, so I pulled out some chicken breasts and added some heat...










What you will need...
  • 4 chicken breasts, pounded a bit
  • 1 cup of uncooked brown rice
  • 1 tbsp canola oil
  • salt and pepper
  • chili powder
  • cumin
  • 1/4 cup jalopeno peppers, sliced
  • 1/2 cup shredded mexican cheese blend
  • hot sauce
Preheat the oven to 350*.  Add the uncooked rice, 1 cup of water, 1 cup of chicken stock (if you don't have stock just use another cup of water), salt and pepper to a pot and bring to a boil for a few minutes.  Simmer the rice for about 45 minutes or until all liquids are absorbed.  Cover the chicken with the oil, salt and pepper, and as much chili powder and cumin as you want...we like ours hot so we use lots!  I didn't use it, but you could also use some garlic and onions.  Place jalopenos on top of each chicken breast in a baking dish and cover with foil.  Bake for about 45 minutes or until chicken is fully cooked.  Top each with cheese and place on a bed of rice.  Add some hot sauce if you like..YUM-OLA!!!

How many people can eat...should fill up about 4 people.

Sides to think about...great with a Mexican vegetable mix.
