Pineapple Salsa

Jeff and I usually are responsible for making some snacks for family gatherings, so this year I thought it would be fun to try a pineapple salsa.  We weren't sure how this would turn out, but it was a big hit!  We will definately be making this again soon...











What you will need...
  • 2 cans of pineapple rings, drained and diced (keep 1/2 cup of the juice)
  • 1 red onion, diced
  • 1 red pepper, diced
  • 1/4 cup diced jalopenos
  • 1 1/2 tbsps lime juice
  • 1 1/2 tbsps honey
  • 1 tbsp olive oil
  • 2 tsps salt
  • 1/2 cup fresh cilantro, chopped
In a bowl, mix the lime juice, honey, olive oil, pineapple juice, and salt.  Mix in the diced pinapple, red onion, red pepper, jalopenos, and cilantro.  Stir, add salt if needed, and serve with tortilla chips...YUM-OLA!!!
