Jambalaya Chili

Whole chickens were on sale this month, so I bought several and put them in the freezer until we were ready to use them.  Since we were going to have lots of pulled chicken, we had to come up with some recipes.  I thought it would be nice to come home to a warm bowl of Jambalaya...











What you will need...
  • 1 whole chicken, slow cooked (with a sprinkle of cajun seasoning, salt and pepper, and a couple garlic cloves) and pulled
  • 1 large turkey sausage link (about 4 servings), sliced thin
  • 5 cans of diced tomatoes
  • 4 cans of red beans, rinsed and drained
  • 2 onions, diced
  • 1 1/2 cup uncooked rice (brown and wild mix)
  • 1 box of chicken stock, plus stock from slow cooker
  • 2 cloves garlic, minced
  • 4 tbsps cajun seasoning
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 1 tbsp parsley
  • lots of salt and pepper
  • 2 1/2 cups of water
  • olive oil
In a large pot over medium heat, add garlic and onions.  Cook a couple minutes, stir occassionally, and then add the turkey sausage and seasonings.  Cook a couple minutes, stir, and then add the chicken stock, chicken, and tomatoes.  Bring to a boil, and then add the beans and water.  Bring to a boil and add the rice.  Cover and simmer 45 minutes, or until the rice is done, stirring occassionally.  Serve in a large bowl with blue corn chips...YUM-OLA!!!
