Jeff and I really like cooking a whole chicken in the Crockpot because it is cheaper and easier with time limitations. We enjoy pulled BBQ chicken, but went for a twist this time...we added pineapple. We have done this in the oven, but I was nervous about the pineapple in the Crockpot...it turned out perfect!
What you will need...
- 1 whole chicken
- 1 jar of your favorite BBQ sauce (or make your own)
- 1 can pineapple chunks in juice
Rinse off the chicken and pull out the bag of "insides". Place in the crock pot. Pour the BBQ sauce and can of pineapple chunks, with the juice, over the chicken. Add a bit of water depending on your Crockpot size so that the chicken doesn't dry out. Cook on low for about 8 hours. When done, try to remove the chicken all at once from the Crockpot. Pull the chicken and place back into the Crockpot with the sauce. Keep on warm setting until served...YUM-OLA!!!
Sides to think about...we like sweet potatoes with BBQ, and the okra was a good choice as well.
How many people can eat...a whole chicken will feed about 8 people.
