Overloaded Baked Potatoes

One week, Jeff and I decided to cook a whole chicken in the crock pot, pull the meat, divide it into three bowls, and season each bowl of pulled chicken to make three different dinners.  This was one of our ideas...















What you will need...
  • 4 Idaho potatoes
  • 1/3 of a whole chicken, pulled
  • 1/4 cup of the chicken stock from the crock pot
  • 3 bags of frozen broccoli cuts, steamed
  • 1 cup shredded marbled cheddar (buy a block and shred it yourself, it is cheaper!)
  • salt and pepper

Preheat the oven to 450*.  Wash the potatoes really good, poke a few wholes in them, wrap them in foil, and bake for about 1 hour.  When the potatoes are baked, take them out and cut them open.  Spoon out some of the potato, as if you were making potato skins, but leave more of the potato.  Top the potatoes with pulled chicken, and pour chicken stock over each potato half so that the potato isn't as dry.  Put the broccoli over each chicken covered potato.  Sprinkle the cheese over the top and put back into the oven, uncovered, for about 10 minutes, or until the cheese is melted...YUM-OLA!!!

This is an all in one meal...doesn't need any sides.

How many people can eat...should feed 4.
