Mexican Lasagna

We haven't had Mexican food in a long time, and I have always wanted to try making a lasagna fiesta.  You won't be able to stop eating this...





What you will need...
  • 9 whole wheat flour tortillas, 10 inch size
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1.5 lbs ground turkey
  • 3 cans of black beans
  • 2 onions, diced
  • 2 green peppers, diced
  • 2 red peppers, diced
  • 3 cans diced tomatoes with chilis
  • 1 tbsp chili powder
  • 2 tsps cumin
  • 1 tsp red pepper flakes
  • salt and pepper
  • 1/4 cup sliced jalopenos
  • 2 cups salsa
  • 3 cups shredded cheese
  • sour cream for topping (optional)
Preheat your oven to 350*.  In a hot skillet with olive oil, add the garlic.  Then, start to cook the ground tukey with salt and pepper and a bit of chili powder.  When turkey is almost cooked, add the diced peppers, onions, and tomatoes, and all seasonings.  Cook a few minutes and then add the beans and 2 cups of salsa and stir well.  After a few minutes, turn the burner off and let the pan set.  In a deep non-stick pan layer tortillas, turkey mixture, and cheese for 3 layers.  Place the jalopenos around the top.  Bake covered for 15 minutes, 10 to 15 minutes uncovered, then let cool for a few minutes before serving.  Top each piece with a spoonfull of sour cream...YUM-OLA!!!

Sides to think about...goes great with spicy corn on the cob, chips and salsa or homemade guacamole.

How many people can eat...should feed 8-10
