Packed Peppers in the Pot


Jeff and I love stuffed peppers, especially this time of year when peppers are so delicious.  We saw a recipe in a magazine for CrockPot peppers and thought it was a great idea, so we put together our own version...
















What you will need...
  • 4 red peppers, tops cut off, stem and seeds removed
  • 2 medium potatoes (red or Idaho) or you can probably use orzo or rice
  • 2 cups of fresh spinach
  • 2 garlic chicken sausages, diced or you can use any meat/poultry
  • 2 samll onions, diced
  • 1 cup mushrooms, diced
  • 4 cloves garlic, minced
  • 1/2 cup parmesian cheese, grated
  • 2 tbsps olive oil
  • salt and pepper
  • 32 oz can of crushed tomatoes
  • 1 cup of cherry tomatoes
  • 1 tbsp Italinan Seasoning
In a large bowl, mix together the potatoes, spinach, chicken sausages, 1 diced onion, 1/2 cup mushrooms, 2 of the minced garlic cloves, cheese, 1 tbsp olive oil, salt and pepper.  Fill the peppers with the mixture.  In the crockpot, pour in the crushed tomatoes, add the cherry tomoatoes, 2 cloves of the minced garlic, 1 diced onion, 1/2 cup mushrooms, any left over red pepper pieces diced, seasoning, salt and pepper, and 1 tbsp olive oil.  Place the peppers in the pot, cover them and cook on low for 6 to 8 hours...YUM-OLA!!!

How many people can eat...should feed 4.

Sides to think about...goes great with a summer salad and garlic bread.
