Strawberry Jam Muffins


You can make these muffins with any kind of your favorite jam!  We used the strawberry jam I made this year for this batch.  These are perfect on a weekend morning, fresh out of the oven, topped with a bit of maple syrup...




What you will need...
  • 1 1/8 cup milk
  • 1 1/8 cup applesauce, unsweetened  
  • 1 egg
  • 1/2 tsp vanilla
  • 6 tbsps oil 
  • 2 cups whole wheat flour
  • 1/3 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup strawberry jam
Mix milk, applesauce, egg, vanilla, most of the jam, and oil in a bowl.  Add the flour, sugar, baking powder, and salt.  Mix until well blended.  Use an ice cream scoop to fill a nonstick muffin pan.  Use the rest of the jam to top each.  Bake at 400* for 20 to 25 minutes, or until a tooth pick comes out clean.  Let set just a couple minutes and then carefully transfer to cooling rack.  After cooled, store covered in refrigerator to keep about 1 week.  Enjoy!




How many can eat...made about 15 muffins.
