Italian Bean Burgers


This is another great burger to use beans in, and it has a fantastic Italian flavor making it very versitile for how you serve your burgers.  You could also make mini balls and serve over a pasta with a homemade white wine sauce or a bed of mixed greens with a light dressing...











What you will need...
  • 2 lbs ground chicken
  • 1 can cananilli beans, drained
  • salt and pepper
  • 3 tbsps olive oil
  • 2 cloves garlic, minced
  • 2 tsps parsley
  • 1 sweet onion, diced
  • 1/4 cup grated parmesan cheese
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 tbsp Italian seasoning
In a food processor, combine beans, salt and pepper, 1 tbsp olive oil, garlic, parsley, and onion until well blended.  Put the ground chicken in a bowl and season well with salt and pepper, and half of the Italian seasoning.  Add the bean mixture, grate in cheese, add the crumbs, and blend together with your hands.  Form about 12 burger patties.  Heat a skillet with a bit of oil over medium-high heat.  Place patties in the skillet and season the tops with salt and pepper and bit more seasoning.  Cook over medium heat until golden brown on each side; about 5 minutes...YUM-OLA!!!

How many people can eat...makes 12 burgers

Sides to think about...great with roasted veggies and pasta with a garlic and white wine sauce.
