Bold Beef Stir Fry

We haven't had stir fry in a long time, so we thought we would break out the wok and the chop sticks...




What you will need...
  • 1 lb sirloin tip sliced 
  • 4 tbsps olive oil
  • salt and pepper
  • 2 tbsps corn starch
  • 1/4 cup water
  • 1/4 cup cooking sherry
  • 1/3+ cups soy sauce
  • 3 cloves garlic, minced
  • 1 to 2 tbsps red pepper flakes (depends on how much heat you want)
  • 4 bags of frozen stir fry vegetables, steamed until almost cooked through (or about 8 cups any diced veggies you like)
  • 1 cup uncooked brown rice, cooked
Start the rice in a stock pot (2 parts water to 1 part rice).  When you are about 25 minutes from the rice being done, start to get all ingredients out and chop the veggies if you are using fresh or just start to steam if you are using frozen.  Season the meat with salt and pepper.  In a bowl, mix 2 tbsps olive oil, corn starch, water, sherry , soy sauce, garlic, and red pepper flakes.  Add the meat to the mix and let it soak for about 5 to 10 minutes.  If you are steaming the frozen veggies, remove from heat just before they are done and set aside, as you want them to e a little crisp.  In the wok, heat 2 tbsp olive oil on medium high heat.  Take the meat out of the mix and add to the wok.  Brown the sirloin and add a splash of water to the wok.  If you like heat, add a few more red pepper flakes now.  Add half the mix from the bowl.  Stir, and let cook a few minutes.  Add steamed veggies and remaining mix. (If using fresh veggies, remove the meat and set aside.  Add veggies to the wok and the remaining mix.  Stir to coat all veggies.  Cook veggies a few minutes and then add the meat.)  Stir well.  Season with a bit more salt and pepper.  Serve over the brown rice...YUM-OLA!!!

How many people can eat...should feed 4 to 6 people.
