Chickpea Chicken Burgers

Another great way to stretch a dollar and have a healthy meal...










What you will need...
  • 1 lb ground chicken
  • 1 can chickpeas, drained
  • salt and pepper
  • 2 tbsps olive oil
  • 1 tsp red pepper flakes
  • 2 tsps cumin
  • 2 tsps thyme
  • 1 tsp parsley
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
In a food processor, mix all but the ground chicken until well blended.  Put the ground chicken in a bowl and season well with more salt and pepper.  Add the chickpea mixture and blend together with your hands.  Form about 10 burger patties, about 1/2 inch thick.  Heat a skillet with a bit of oil over medium heat.  Place patties in the skillet and season the tops with salt and pepper.  Cook until golden brown on each side; about 5 minutes...YUM-OLA!!!

How many people can eat...makes 10 small burgers
