Buffalo Chicken Sloppy Joes

Got this spin on a sloppy joe recipe from Rachel Ray, and I modified it based on ingredients I already had on hand.  A great healthy meal the whole family will enjoy...












What you will need...
  • 1 lb ground chicken
  • 1/2 sweet onion, diced
  • 2 medium carrots, chopped fine
  • 3 cloves garlic, chopped fine
  • 1 1/2 tbsps brown sugar
  • 2 tbsps red wine vinegar
  • 1 1/2 tbsps Worcestershire
  • 1/3 cup hot sauce
  • 1/2 cup ketchup
  • 1 cup water
  • salt and pepper
In a skillet over medium heat, brown the chicken in some olive oil.  Season the chicken with salt and pepper.  When brown, add onion, garlic, and carrots.  In a bowl, mix all the other ingredients to make the sauce.  Add the sauce to the pan and let the ground chicken and veggies soak in the sauce.  After a few minutes you will have what looks like a healthy sloppy joe...YUM-OLA!

Sides to think about...great with potato wedges and any veggie:)

How many can eat...should feed 4.
