I saw a recipe for black bean burgers and thought I would try my own ideas out. We are trying to eat more beans to save both money and our bodies from strain. We had some roasted red pepper left from hummus so I thought it would be a great ingredient to use...
What you will need...
- olive oil
- 2 cups cooked black beans
- 1 cup cooked brown rice
- 1 small onion, diced
- 1 whole roasted red pepper from a jar, diced
- 4 cloves of garlic, minced
- 2 eggs
- salt and pepper
In a bowl, mix 1 tbsp olive oil with beans and mash the beans with a fork. Mix in all other ingredients into the bowl. In a skillet, heat some olive oil over medium heat. Form small patties and drop into the skillet. Cook for about 5 minutes on each side, or until browned. No need for a bun or toppings, just grab a fork...YUM-OLA!!!
How many people can eat...makes about 8 patties.
