Beans and Bundles

This dinner was inspired by leftovers...we had brown rice, white beans, and ham left from previous dinners, so this is what I came up with...


What you will need...
  • 2 cups brown rice, cooked
  • 1 1/2 cups white beans, cooked
  • 1 bag frozen cut carrots
  • 32 asparagus spears
  • 8 slices deli ham
  • 1 tbsp olive oil
  • salt and pepper
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • 1 can chicken broth
Preheat oven to 425*.  Brush the spears with olive oil and sprinkle with salt and pepper.  Wrap 4 spears in one slice of ham.  Repeat with all asparagus and ham.  Bake covered for 15-20 minutes or until spears are done to your liking.  In a pot, bring chicken broth and 1 can of water to a boil.  Add carrots and beans.  When carrots are cooked, drain the liquid, leaving about 1/4 liquid in the pot.  Add rice, thyme, rosemary, salt and pepper.  Cook on medium heat for just a few minutes.  Place a large spoonful of the rice, carrot, bean mixture on a plate and top with one or two bundles...YUM-OLA!!!

Sides to think about...none needed, but a small slice of French bread is nice brushed with olive oil and toasted in the oven.

How many people can eat...should feed about 8 people if everyone gets 2 bundles.

  1. Neeley, I am looking forward to making this. It sounds really good. I was wondering if a flavored olive oil would go nice with the french bread. Your recipes have helped me so much with menu planning. Ana

  2. Depends of the flavor probably, as the dish is not super Italian tasting...but give it a shot and let me know:)
