Summer Garden Bake

We love fresh veggies and herbs.  Since we are in the condo, we don't get to enjoy our own garden...lucky for us we have friends and family that share their home grown vegetables and herbs.  We were given some fresh rosemary that inspired this dish and made our house smell so fantastic!
















What you will need...
  • 3 tbsps olive oil
  • 3 chicken breasts, cut into bite size cubes
  • 2 yellow squash, cut into bit size cubes
  • 2 zucchini, cut into bit size cubes
  • 2 pints of sweet tomatoes (golf ball size), quartered or halved
  • 1 tbsp fresh rosemary, chopped a bit
  • 1 tsp thyme
  • salt and pepper
  • mozzarella cheese
In a bowl, mix together the chicken, squash, zucchini, tomatoes, and olive oil.  Pour the mixture into a baking dish.  Sprinkle with salt, pepper, rosemary, and thyme.  Cover and bake on 325* to 350* for about an hour.  In the last 20 minutes, remove to see color of chicken, and to add some freshly grated mozzarella cheese over the top, cover and continue baking.  Remove from the oven and serve...YUM-OLA!!!

Sides to think about...we had it over rice, but red potatoes would be yummy!

How many can eat...4-6, depending on what you serve it with!
