Got the idea for these while I was Krogering and saw the apple butter, and immediately thought of cinnamon apple...perfect in the morning with a cup of coffee!
What you will need...
- 1 cup milk 
- 1 cup applesauce, unsweetened 
- 1/4 cup apple butter 
- 1 egg 
- 1/2 tsp vanilla 
- 3 tbsp oil (I use vegetable) 
- 2 cups whole wheat flour 
- 1/3 cup brown sugar 
- 1 to 2 tbsp cinnamon (depends on how cinnamony you want them)
- 3 tsp baking powder 
- 1/2 tsp salt 
- 1/2 cup raisins
Mix milk, applesauce, apple butter, cinnamon, egg, vanilla, and oil in a bowl.  Add the flour, brown sugar, baking powder, and salt.  Mix until well blended.  Stir in the raisins.  Use an ice cream scoop to fill a nonstick muffin pan.  (NOTE:  I also used a turn or two of the cinnamin-sugar grinder over each.)  Bake at 400* for 20 to 25 minutes, or until a tooth pick comes out clean.  Let set just a couple minutes and then carefully transfer to cooling rack.  After cooled, store covered in refrigerator to keep about 1 week.  Enjoy!
How many can eat...made about 15 muffins.
