Chili Turkey Loafs

We love making the Tiny Turkey Loafs because they are so tastey, and because we have lots of leftovers.  So, this is a different spin on the flavors...










What you will need...
  • 2 lbs ground turkey
  • salt and pepper
  • 1 tbsp chili powder
  • 1 tsp red pepper flakes
  • 2 tsps cumin
  • 2 eggs
  • 1/2 cup quick cook oats
  • 1 can pinto beans, rinsed and drained
  • 2 tbsps salsa
  • 1/2 red pepper
  • 1/2 green pepper
  • 1/2 onion
  • 2 cloves of garlic
  • olive oil to coat pans
Preheat your oven to 425*.  In a bowl, mix the  turkey, salt and pepper, chili powder, red pepper flakes, cumin, eggs, and oats.  In a food processor put the salsa, red pepper, green pepper, onion, and garlic.  Chop well, add pinto beans and chop just a bit, but leave the beans somewheat chunky.  Add the mixture to the bowl and use your hands to mix well.  Make small balls the size of a muffin and fill the cups.  Be sure to coat a muffin pan with oil first.  Fill 14 to 15 muffin cups and bake for 20 to 25 minutes uncovered.  You might want to put a pan under the muffin pan to catch any excess juices.  Remove from the oven and top each with a spoonful of salsa, and return to the oven for a minute or two...YUM-OLA!!!

How many people can eat...makes 14 or 15 mini loafs
