The Perfect Chili

Combined my momma's techniques with some that I saw on TV to create the perfect chili!  We always make a huge pot so we can eat on it for a few times in a week (it gets even better a few days later), freeze some, or have some friends and family over...











What you will need...
  • whole wheat spaghetti noodles, broken into small pieces
  • 3 lbs ground beef or ground turkey (we like turkey!)
  • 2 onions, diced
  • 2 green peppers, diced
  • 1 red pepper, diced (optional)
  • olive oil
  • salt and pepper
  • 7 cloves garlic
  • 5 tbsps chili powder
  • 3 tbsps cumin
  • 1/4 cup jalapeno peppers, diced
  • 1 tbsp jalapeno juice
  • 1/2 tbsp red pepper flakes
  • 4 cans kidney beans, drained
  • 5 cans hot chili beans
  • 5 cans fire roasted diced tomatoes
  • 4 cans of water (from the hot chili beans to get all the flavor)
  • shredded cheddar cheese
You will need a super large stock pot (or two large pots because we are making lots!).  Sauté the garlic, onions, and peppers in olive oil over medium heat for a few minutes.  Add a bit more oil if needed and the meat or turkey.  Add the spices and cook until meat is no longer pink.  Add the red pepper flakes (if you don't like that much heat, add them later).  Add the beans, tomatoes, and water.  Bring to a gentle boil and add noodles.  Cover and simmer 45 minutes.  Top with cheddar cheese...YUM-OLA!!!

Sides to think about...great with a hummus and veggie tray, sweet cornbread, peanut butter sandwiches, or crackers. (The cornbread is our favorite!!!)

How many people can eat...makes about 12 really big soup bowls.
