Beaned Sweet Potatoes

Okay, so it sounds weird, but seriously try it...so easy, so quick, soooo good!!!  It isn't technically a recipe (unless you make your own beans); it is just a yummy idea we came up with one night we were in a hurry.




What you will need...
  • 4 sweet potatoes
  • OPTION 1:  2 cans of baked beans (we like Bush's Vegetarian)
  • OPTION 2:  use your own yummy baked bean recipe...I will share my recipe when it is perfected
Preheat your oven to 450*.  Wash the sweet potatoes really good, poke a few holes in them, and wrap them each in foil.  Bake  at 450* for about 1 hour or until soft.  If you don't have an hour, you can microwave them on the potato setting for part of the time and then put them in the oven for part of the time to speed up the process, and this makes them way better than just microwaving them.  Heat the beans on the stove and that is it!  Just cut your potato open and top with baked beans...YUM-OLA!!!

Sides to think about:  any vegetables will do!

How many people can eat...if you make 4 potatoes, then 4 people.
