As you all know, I watch a lot of shows on the Food Network to get some ideas for new meals. One day, on Diners, Drive-ins, and Dives, I saw them make a meatloaf wrapped in bacon...I immediately thought about how I could make a modified version...trust me, you will want to try this one.
What you will need...
- 2 pounds of ground turkey
- 1 can of pinto beans, drained and rinsed, and mashed a bit with the potato masher
- 2 eggs
- 1/2 cup bread crumbs (I like to make my own from some Great Harvest Bread I have put in the freezer)
- 1 sweet onion, diced fine
- 1 yellow pepper, diced fine
- 4 tbsps bbq sauce
- salt and pepper
- 1 pkg bacon (a little bacon in life is okay:))
- 1/4 cup bbq sauce
Preheat the oven to 350*. In a bowl, mix the ground turkey, mashed beans, eggs, bread crumbs, onion, yellow pepper, 4 tbsps bbq sauce, and salt and pepper. Mix well. On a sheet of parchment paper, lay out the bacon, overlapping just a bit. Form a loaf with the mixture, brush it with a bit more bbq sauce, and lay it in the middle of the bacon. Wrap the bacon around the loaf, using the parchment paper, so that the bacon is tucked under the loaf, place on your broiler pan (it should still be in the parchment paper), and bake for 20 minutes. Cut away and remove the paper, then bake another 40 minutes. Turn the oven to 450 and bake another 15 minutes to let the bacon crisp. If you want really crispy bacon, put it under the broiler for just a minute. Brush a bit more sauce over the top, slice, and serve...YUM-OLA!!!
Sides to think about...great with mashed sweet potatoes, green beans, and baked yellow squash and sweet onions.
How many people can eat...should feed 8-10 hungry people.
